Cinnamon Spiced Carrots
1. Try adding additional veggies such as winter squash or even sweet peppers to spice up the dish a little
2. Use honey or non-calorie sweeteners as alternatives to the sugar if you want to reduce this in the recipe
1. Try cooking a little longer or at different intervals, to test out the browning and its impact on flavor
Cut the carrots into round slices, about ½ inch thick. In a medium skillet, melt butter and saute carrots. Cook until slightly softened, stirring occasionally. Add in brown sugar and stir until dissolved. Add in remaining ingredients and simmer until carrots are tender and sauce is reduced by half.
